These Easy Buffalo Chicken Pinwheel Bites are the ultimate game day appetizer—creamy, spicy, and portable. Made with shredded chicken, cream cheese, buffalo sauce, and cheddar, they come together in minutes and disappear before halftime.

  • 8 ounces cream cheese, softened to room temperature
  • 1/3 cup buffalo hot sauce (such as Frank’s RedHot)

  • 1 tablespoon ranch dressing mix (about half a packet)
  • 3 to 4 green onions, thinly sliced
  • 4 to 5 large flour tortillas (burrito-size, about 10 inches)
  • Blue cheese or ranch dressing for dipping (optional)

Instructions

  1. Soften the cream cheese: Take cream cheese out of fridge 30 minutes before starting. If forgotten, microwave in 10-second bursts until soft but not melted.
  2. Shred the chicken: If using rotisserie chicken, pull meat off bones and shred with two forks or fingers into small, even pieces. Measure out 2 cups.
  3. Mix the filling: In a medium bowl, combine softened cream cheese, buffalo hot sauce, ranch dressing mix, and shredded cheddar. Use a hand mixer or sturdy spoon to blend until smooth and well combined.
  4. Add chicken and green onions: Fold in shredded chicken and sliced green onions until every piece is coated. Taste and adjust heat if desired.
  5. Prep the tortillas: Lay tortillas flat on a cutting board. If dry or stiff, microwave for about 10 seconds until pliable.
  6. Spread the filling: Divide filling evenly among tortillas. Using a spatula or back of a spoon, spread in a thin, even layer all the way to the edges.
  7. Roll them up tight: Starting at one end, roll each tortilla tightly but gently. Place seam-side down on a piece of plastic wrap.
  8. Wrap and chill: Wrap each roll tightly in plastic wrap, twisting ends like a candy wrapper. Place on a baking sheet or platter and refrigerate for at least 1 hour (overnight is better).
  9. Slice and serve: When ready to serve, unwrap rolls and place on a cutting board. Using a sharp serrated knife, slice each roll into 1-inch pinwheels using a gentle sawing motion. Arrange on a platter and serve with ranch or blue cheese dressing.

Chill time is non-negotiable for clean slices. For best results, make the night before. Use a serrated knife to avoid squishing. If rolls are too soft to slice, freeze for 15 minutes before cutting. For a warm version, bake sliced pinwheels at 375°F for 10-12 minutes.
