Instructions

  1. Prep the baking sheet: Line a large baking sheet with parchment paper or a silicone baking mat. Set it aside.
  2. Prepare the popcorn: If you’re popping fresh popcorn, pop about 1/2 cup of kernels using your preferred method (air popper, stovetop, or microwave). You need 8 cups of popped popcorn. Spread it out on the prepared baking sheet and pick out any unpopped kernels. Let it cool completely—warm popcorn will melt the chocolate.
  3. Melt the chocolate: In a large microwave-safe bowl, combine the white chocolate chips and 1 tablespoon of coconut oil. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely smooth and melted. This usually takes about 1 1/2 to 2 minutes total. Be careful not to overheat it, or the chocolate will seize.
  4. Combine the ingredients: Pour the melted white chocolate over the popcorn on the baking sheet. Add the candy corn (and peanuts or pretzels if using). Using a rubber spatula, gently fold everything together until the popcorn and candy corn are evenly coated in chocolate. Work quickly here—the chocolate will start to set as it cools.
  5. Spread and press: Spread the mixture into an even layer on the baking sheet. Use the spatula or your hands (lightly greased with a little coconut oil) to press it down firmly. You want the bark to be about 1/2 to 3/4 inch thick. If you want a more even layer, place another piece of parchment on top and press down with a second baking sheet.
  6. Chill: Place the baking sheet in the refrigerator for at least 30 minutes, or until the chocolate is completely firm. If you’re in a hurry, you can pop it in the freezer for 15 minutes.

Notes

Use fresh, completely cooled popcorn for the best crunch. Avoid heavily buttered popcorn. If the white chocolate seizes, start over with fresh chocolate. Store in an airtight container at room temperature for up to 5 days. Do not freeze.
