This Easy Copycat Starbucks Pumpkin Cream Cold Foam is a quick and simple recipe that brings the coffee shop experience home. With a secret ingredient for that signature thick, velvety texture, it tastes even better than the original and saves you money.

Ingredients

Scale
  • 1/4 cup (60 ml) heavy cream
  • 2 tablespoons (30 ml) whole milk
  • 1 tablespoon (15 g) cream cheese, softened to room temperature
  • 1 tablespoon (15 g) pumpkin puree (100% pure, not pie filling)
  • 1 to 2 tablespoons (15 to 30 ml) vanilla syrup, to taste
  • 1/4 teaspoon pumpkin pie spice
  • Pinch of salt
  • Ice, enough to fill your glass
  • 1 cup (240 ml) cold brew or strong coffee

Instructions

  1. Soften your cream cheese: Take 1 tablespoon of cream cheese out of the fridge and let it sit on the counter for about 15 minutes, or microwave for 5 seconds until soft but not melted.
  2. Combine the foam ingredients: In a small bowl or jar, add the softened cream cheese, heavy cream, whole milk, pumpkin puree, vanilla syrup, pumpkin pie spice, and a tiny pinch of salt.
  3. Froth until thick: Use a handheld milk frother to blend for about 30 to 45 seconds, until the mixture is thick and pourable like loose whipped cream and holds soft peaks.
  4. Taste and adjust: Dip a clean spoon in and taste the foam. Add more vanilla syrup or spice if desired.
  5. Fill your glass with ice: Use enough ice to fill the glass almost to the top.
  6. Pour your cold brew or coffee: Pour about 1 cup of cold brew over the ice, leaving about an inch of space at the top.
  7. Spoon the foam on top: Gently spoon the foam onto the coffee instead of pouring it, to keep it from sinking and create a layered look.
  8. Finish with a garnish: Sprinkle a tiny bit of pumpkin pie spice or cinnamon on top of the foam.
  9. Serve immediately: Drink within 10 minutes for the best texture. Stir gently with a straw if desired.

Notes

Temperature is key: cream cheese must be soft, and coffee must be cold. Don’t over-froth the foam; stop when it holds soft peaks. Use a spoon to layer the foam on top, not pour it. The foam is best enjoyed immediately within 10 minutes. For a dairy-free version, use full-fat canned coconut cream and dairy-free cream cheese. For extra pumpkin flavor, add 1/2 tablespoon more pumpkin puree and a pinch more spice.
