  • ½ cup (130g) creamy peanut butter
  • 2 cups (480ml) milk (any kind)
  • ½ cup (120g) plain Greek yogurt
  • 2 tablespoons (20g) chia seeds
  • 2 tablespoons (30ml) maple syrup
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • Optional toppings: sliced banana, drizzle of peanut butter, chopped peanuts, dark chocolate chips, cinnamon

Instructions

  1. Mash the bananas in a mixing bowl until mostly smooth, leaving a few small chunks if desired.
  2. Add the peanut butter and stir into the mashed banana until well combined.
  3. Pour in the milk and Greek yogurt, then whisk until smooth.
  4. Add the rolled oats, chia seeds, maple syrup, vanilla extract, and salt. Stir until all ingredients are evenly distributed and oats are submerged.
  5. Let the mixture rest for 5 minutes to allow oats and chia seeds to start absorbing liquid.
  6. Divide the mixture evenly among 4 to 5 jars, filling each about ¾ full.
  7. Seal the jars tightly and refrigerate for at least 6 hours, preferably overnight.
  8. Before serving, stir the oats and add desired toppings.

Use ripe bananas with brown spots for best sweetness. Do not skip chia seeds—they are essential for thickening. Mix peanut butter with banana first to avoid clumps.
