Instructions

  1. Wash all fresh produce. Thinly slice the cucumber and red bell pepper into long strips about 1/4 inch thick. Peel and julienne or grate the carrot if using. Set aside fresh spinach or arugula leaves.
  2. In a medium bowl, soften the cream cheese by stirring gently. Add garlic powder, lemon zest, chopped herbs, salt, and pepper. Mix until smooth and evenly combined. Add Dijon mustard if desired.
  3. Lay out the turkey slices flat on a clean surface or cutting board, slightly overlapping to form a rectangle about 8×10 inches.
  4. Spread a thin, even layer of the cream cheese mixture over the turkey slices, leaving about half an inch at the edges.
  5. Arrange the cucumber, bell pepper strips, carrot, and spinach/arugula evenly across the cream cheese layer.
  6. Starting from one short edge, carefully roll the turkey slices into a tight log, using your fingers to keep the veggies and cheese in place. Wrap tightly in plastic wrap or parchment paper and chill in the refrigerator for 20 minutes to firm up.
