  • 1 ½ cups heavy cream
  • ½ cup low-sodium chicken or vegetable broth
  • ½ teaspoon dried thyme
  • ¼ teaspoon freshly ground black pepper

  • 3 large shallots, thinly sliced into rings (about 1 cup)
  • ¼ cup all-purpose flour (for shallot coating)
  • ¼ cup neutral oil (avocado or grapeseed)

Instructions

  1. Bring a large pot of water to a rolling boil and add 1 tablespoon kosher salt. Trim the stem ends off the green beans. Drop the beans into the boiling water and cook for exactly 2 minutes. Immediately transfer to a bowl of ice water to stop the cooking. Drain well and pat dry with a clean kitchen towel. Set aside.
  2. While the beans blanch, separate the sliced shallots into rings and toss with ¼ cup flour until lightly coated. Heat ¼ cup neutral oil in a small saucepan over medium heat.
