This easy crockpot buffalo chicken dip with celery is a creamy, spicy, and addictive appetizer perfect for game days, potlucks, or any gathering. Made with simple ingredients like cream cheese, shredded chicken, buffalo sauce, and ranch dressing, it’s a crowd-pleaser that comes together in minutes.

Ingredients

Scale
  • 2 cups cooked shredded chicken
  • 8 ounces cream cheese, softened
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/4 cup crumbled blue cheese (optional)
  • Celery sticks for serving
  • Optional garnishes: chopped green onions, extra buffalo sauce, fresh parsley

Instructions

  1. Prepare your chicken: If using rotisserie chicken, remove skin and bones and shred into small pieces. If cooking from scratch, season two boneless skinless chicken breasts with salt and pepper, bake at 375°F for 25 minutes, then shred.
  2. Soften the cream cheese: Take cream cheese out of refrigerator 30 minutes before starting. Cut into cubes for faster melting.
  3. Combine everything in the crockpot: Add shredded chicken, softened cream cheese cubes, buffalo wing sauce, ranch dressing, and half of the shredded cheddar cheese. Stir to combine.
  4. Cook on low: Cover and cook on low for 2 to 3 hours. Stir after 1 hour and again at 2 hours. Dip is ready when fully combined, hot, and bubbling.
  5. Add remaining cheese: Sprinkle remaining cheddar on top. Cover and cook for another 10 to 15 minutes until melted. Add crumbled blue cheese if using.
  6. Stir and taste: Give final stir. Adjust seasoning if needed. Add more buffalo sauce for heat or a splash of milk or ranch if too thick.
  7. Prepare celery: Wash and cut celery stalks into 3 to 4-inch pieces. Pat dry.
  8. Serve warm: Switch slow cooker to warm setting and serve directly from crockpot, or transfer to a serving bowl surrounded by celery sticks. Garnish as desired.

Notes

Do not rush the cooking time; cooking on low allows flavors to meld. If dip seems oily, stir it back in. For best texture, use full-fat cream cheese and shred your own cheddar. Adjust heat by varying buffalo sauce amount. Dip can be made ahead and reheated.
