Crockpot Honey Garlic Chicken Thighs - featured image

This easy crockpot honey garlic chicken thighs recipe uses only 4 ingredients and delivers sticky, sweet, and impossibly tender chicken. Perfect for busy weeknights, it’s a set-it-and-forget-it dinner that tastes like you planned it, even when you didn’t.

Ingredients

Scale
  • 2 lbs (900g) boneless, skinless chicken thighs
  • 1/2 cup (170g) honey
  • 1/2 cup (120ml) low-sodium soy sauce
  • 6 cloves garlic, minced
  • 2 tbsp cornstarch (optional, for thicker sauce)
  • 2 tbsp water (for cornstarch slurry, optional)
  • Sesame seeds and sliced green onions (for garnish, optional)

Instructions

  1. Prep the chicken: Pat 2 lbs chicken thighs dry with paper towels, trim excess fat, and place in a single layer in the slow cooker.
  2. Make the sauce: Whisk together 1/2 cup honey, 1/2 cup soy sauce, and minced garlic until combined.
  3. Pour sauce over chicken, cover, and cook on LOW for 4-5 hours or HIGH for 2-3 hours until fork-tender and internal temperature reaches 165°F (74°C).
  4. Optional: For a thicker glaze, remove chicken, whisk 2 tbsp cornstarch with 2 tbsp cold water, stir into slow cooker liquid, and cook on HIGH for 20-30 minutes until thickened. Return chicken to slow cooker and coat with sauce.
  5. Serve hot over rice or quinoa, garnished with sesame seeds and green onions if desired.

Notes

For best results, use chicken thighs instead of breasts to avoid dryness. The cornstarch slurry is optional but highly recommended for a thicker, stickier glaze. Leftovers can be stored in the refrigerator for up to 4 days or frozen for up to 3 months.
