  • 1 lb ground beef (80/20)
  • 1 tablespoon olive oil
  • 2 tablespoons taco seasoning
  • 1/4 cup water
  • 1 teaspoon smoked paprika
  • 2 cups shredded lettuce
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup diced tomatoes, seeded and drained
  • 1/2 cup sliced black olives
  • 1/4 cup chopped green onions
  • 1 yellow bell pepper
  • 1/4 cup sour cream

Instructions

  1. Prepare the base layer: In a medium bowl, combine refried beans, taco seasoning, and water. Stir until smooth and spreadable. Spread evenly across the bottom of a 9×13-inch dish.
  2. Make the creamy layer: In a separate bowl, beat softened cream cheese with a hand mixer until fluffy. Add sour cream, salsa, cumin, and garlic powder. Beat until smooth. Spread gently over the bean layer.
  3. Cook the meat: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned, about 6-8 minutes. Drain excess fat. Add taco seasoning, smoked paprika, and water. Simmer for 2 minutes. Let cool for 5 minutes.
  4. Add the meat layer: Spoon seasoned beef evenly over the creamy layer. Spread gently without pressing down.
  5. Top with cheese: Sprinkle shredded cheddar cheese evenly over the beef.
  6. Chill the dip: Cover with plastic wrap and refrigerate for at least 1 hour, or up to 24 hours.
  7. Add fresh toppings: Just before serving, sprinkle shredded lettuce over the top, leaving a 1-inch border. Add diced tomatoes and black olives in rows. Scatter green onions.
  8. Create the football field design: Cut yellow bell pepper into thin strips for goal posts. Pipe sour cream yard lines across the field using a small zip-top bag with a snipped corner.
  9. Serve immediately with tortilla chips.

Notes

Chilling is non-negotiable for clean layers. Drain tomatoes well to prevent sogginess. Use room temperature cream cheese for smooth blending. Warm refried beans for easier spreading.
