These freezer-friendly turkey taco meal prep bowls are packed with seasoned ground turkey, black beans, corn, and rice, topped with a zesty lime crema. Perfect for busy weeknights, they taste even better after a day or two as the flavors meld together.

  • 2 lbs ground turkey (93% lean)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 packet taco seasoning (or 3 tbsp homemade blend)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained (or 1½ cups frozen corn, thawed)
  • 1 can (10 oz) diced tomatoes with green chilies (Rotel-style)
  • ½ cup chicken broth (low sodium)
  • Salt and pepper to taste
  • 3 cups cooked rice (white, brown, or cauliflower rice)
  • 1 cup shredded lettuce (add fresh when serving)
  • ½ cup diced tomatoes (add fresh when serving)
  • ½ cup shredded Mexican blend cheese (optional)
  • ¼ cup chopped fresh cilantro
  • ½ cup sour cream (or Greek yogurt)
  • Juice of 1 lime
  • 1 tbsp chopped cilantro
  • Pinch of salt

Instructions

  1. Cook the rice: Cook 1½ cups dry rice according to package directions to yield about 3 cups cooked. Let cool completely before assembling bowls.
  2. Brown the turkey: Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook for 6-8 minutes, breaking it apart, until no longer pink.
  3. Add aromatics: Push turkey to one side, add diced onion, and cook 3-4 minutes until translucent. Stir in garlic for 30 seconds.
  4. Season and simmer: Sprinkle taco seasoning over turkey mixture. Add black beans, corn, diced tomatoes with green chilies, and chicken broth. Stir and bring to a simmer. Reduce heat to medium-low and cook for 10-15 minutes, stirring occasionally, until slightly thickened.
  5. Make lime crema: Whisk together sour cream, lime juice, cilantro, and salt. Adjust to taste. Store in fridge for up to a week.
  6. Cool everything completely: Spread turkey mixture on a baking sheet to cool faster if needed. Rice should be at room temperature.
  7. Assemble bowls: Divide cooled rice among meal prep containers. Top with turkey mixture, leaving about ½ inch of space. Add cheese if using. Do not add lettuce, fresh tomatoes, or crema yet.
  8. Seal and label: Snap lids on tight or squeeze air out of bags. Label with date and contents. Freeze for up to 3 months.

Notes

Cool all ingredients completely before freezing to prevent ice crystals. Keep fresh toppings like lettuce, tomatoes, and crema separate until serving. Double the batch for extra meals. Season generously as freezing dulls flavors slightly.
