Ingredients

  • All-purpose flour – 1 ½ cups (190g)

  • Vanilla extract – 1 teaspoon
  • Cold water – 3-4 tablespoons
  • Cream cheese – 8 ounces (225g), softened
  • Powdered sugar – ¾ cup (90g), sifted
  • Heavy cream – 2 tablespoons (30ml)
  • Fresh lemon zest – 1 teaspoon
  • Vanilla extract – ½ teaspoon
  • Strawberries – 1 cup, hulled and sliced
  • Blueberries – ½ cup
  • Kiwi – 1, peeled and sliced
  • Mango – 1 small, peeled and diced
  • Optional: fresh mint leaves for garnish

Instructions

  1. In a large bowl, whisk together 1 ½ cups all-purpose flour, 2 tablespoons sugar, 1 teaspoon cinnamon, and ½ teaspoon salt.
  2. Add ½ cup cold cubed butter and cut into the flour mixture using a food processor or pastry cutter until it resembles coarse crumbs.
  3. Stir in 1 teaspoon vanilla extract. Add cold water, 1 tablespoon at a time, mixing gently until the dough just comes together.
  4. Wrap the dough in plastic wrap and chill in the fridge for 30 minutes.
  5. Preheat oven to 350°F (175°C). Line a baking sheet or pizza pan with parchment paper.
  6. Roll the chilled dough into a 12-inch circle on a lightly floured surface and transfer to the prepared pan.
  7. Bake for 15-18 minutes until edges are golden and surface is set but not browned. Cool completely on a wire rack.
  8. In a medium bowl, beat 8 ounces softened cream cheese with ¾ cup powdered sugar until smooth.
  9. Add 2 tablespoons heavy cream, 1 teaspoon fresh lemon zest, and ½ teaspoon vanilla extract. Beat until light and fluffy.
  10. Spread the cream cheese frosting evenly over the cooled crust.
  11. Arrange fresh fruit (strawberries, blueberries, kiwi, mango) in a colorful pattern on top.
  12. Chill the assembled fruit pizza in the fridge for at least 30 minutes to let the frosting set and flavors meld.
  13. Garnish with fresh mint leaves before serving if desired.
