This Easy Game Day Loaded Nacho Charcuterie Board isn’t about perfection. It’s about the kind of snack spread that keeps everyone hovering around the coffee table, dipping and scooping and fighting over the last crispy chip, all without anyone having to leave the room when the score gets tight.

  • 1 (18-ounce) bag sturdy tortilla chips (such as On The Border white corn chips)
  • 1 (16-ounce) jar queso blanco or nacho cheese sauce (such as Mateo’s)
  • 1 pound Mexican chorizo or ground beef
  • 1 (16-ounce) can refried beans
  • 1 cup shredded Mexican blend cheese (Monterey Jack and cheddar)
  • 1 cup sour cream
  • 1 cup guacamole (store-bought or homemade)
  • 1 cup pico de gallo or fresh salsa, drained
  • 1/2 cup pickled jalapeños
  • 1/2 cup black olives (optional)
  • 1/4 cup fresh cilantro, chopped
  • 2 green onions, sliced
  • 2 limes, cut into wedges

Instructions

  1. Prep the Warm Elements: In a skillet over medium-high heat, brown 1 pound of Mexican chorizo or ground beef. Break it up with a wooden spoon until it’s crispy and cooked through, about 6-8 minutes. Drain the excess fat on a paper towel-lined plate. While that’s cooking, heat your queso in a small saucepan over low heat or in the microwave in 30-second bursts, stirring until smooth. Also, heat up a 16-ounce can of refried beans in a small pot or in the microwave.
  2. Prep the Cold Elements: Take your sour cream, guacamole, and pico de gallo out of the fridge. If you’re using store-bought, just give them a stir. If you’re making fresh guacamole, mash 3 ripe avocados with a fork, then mix in 1/4 cup of diced onion, 1 jalapeño (minced), the juice of 1 lime, and salt to taste. Chop your cilantro and slice your green onions.
  3. Assemble the Board: Place your large board or baking sheet on the counter. Start by placing your small bowls and ramekins around the board. I usually put the queso in the center-left, the guacamole in the center-right, the sour cream in the top-left corner, the pico de gallo in the top-right corner, and the refried beans in the bottom-middle. This creates visual anchors.
  4. Lay the Foundation: Pour the entire bag of tortilla chips onto the board, filling in all the empty spaces around the bowls. Don’t just dump them in one pile. Spread them out so they cover the board in a single, even layer. This is the ‘carpet’ of your nacho landscape. Make sure chips are nestled right up against the bowls.
  5. Add the Warm Protein: Sprinkle the warm, cooked chorizo or ground beef directly over the chips. Don’t pile it all in one spot. Distribute it evenly so that every handful of chips has a chance of grabbing some meat. Let the heat from the meat start to soften the chips underneath.
  6. Add the Cheese and Toppings: Sprinkle the shredded Mexican blend cheese over the whole board. Then, scatter the pickled jalapeños and black olives (if using) over the top. This is where you create little ‘pockets’ of flavor. Don’t be shy with the jalapeños—they’re essential.
  7. Garnish and Serve: Finish with a generous sprinkle of fresh cilantro and sliced green onions. Place the lime wedges around the edge of the board. Serve immediately while the queso is warm and the chips are still crunchy. The beauty of this board is that people can grab a chip, dip it in the warm queso, and then pile on the cold toppings from the bowls.

Notes

Don’t put the guacamole or sour cream bowls directly next to the warm queso bowl. The heat can make them warm and watery. Keep the cold elements on the cooler side of the board. Drain the pico de gallo well to prevent soggy chips. For best results, serve immediately.
