  • 810 thin slices of deli ham
  • 1215 thin asparagus spears
  • 4 large flour tortillas (8-inch)

Instructions

  1. Blanch the asparagus: Bring a large pot of salted water to a rolling boil. Fill a bowl with ice water. Trim the woody ends off the asparagus (about an inch from the bottom). Drop the spears into the boiling water and cook for exactly 2 minutes. They should turn bright green and be tender but still crisp. Immediately transfer them to the ice bath using a slotted spoon or tongs. Let them sit for 2-3 minutes, then drain and pat completely dry with paper towels.
  2. Make the cream cheese filling: In a medium bowl, combine the softened cream cheese, sour cream, garlic powder, onion powder, pepper, and fresh herbs if using. Stir until smooth and well combined. Taste and adjust seasoning if needed.
  3. Prepare your work station: Lay a tortilla flat on your cutting board. Spread about 2 tablespoons of the cream cheese mixture evenly over the entire surface, leaving a 1/2-inch border around the edges.
  4. Layer the ham and asparagus: Place 2-3 slices of ham over the cream cheese, overlapping them slightly to cover the tortilla. Lay 3-4 asparagus spears across the bottom third of the tortilla, parallel to the edge where you’ll start rolling.
  5. Roll it up tight: Starting from the edge with the asparagus, roll the tortilla tightly but gently. Use your fingers to keep everything snug as you go. When you reach the end, press the seam gently to seal.
  6. Wrap and chill: Place the rolled tortilla seam-side down on a piece of plastic wrap. Wrap it tightly, twisting the ends like a candy wrapper. Repeat with the remaining tortillas. Refrigerate for at least 1 hour, or up to 24 hours.
  7. Slice and serve: When ready to serve, unwrap each roll and place it on your cutting board. Using a sharp knife, slice off the uneven ends. Then slice the roll into 1-inch pinwheels. Arrange on a platter and serve cold or at room temperature.

Notes

Let cream cheese soften naturally for best results. Don’t over-blanch the asparagus—2 minutes is perfect. Chilling is essential for clean slices. The flavors improve after a day in the fridge.
