Instructions

  1. Preheat your oven to 375°F (190°C). Grease your muffin tin thoroughly with butter or non-stick spray. Set aside.
  2. Reduce the apple cider (optional but recommended): Pour 1 cup apple cider into a small saucepan and bring to a simmer over medium heat. Cook for 8-10 minutes until reduced to about 1/2 cup. Let cool.
  3. Mix the wet ingredients: In a large bowl, whisk together melted butter, granulated sugar, and brown sugar until smooth. Add eggs one at a time, whisking well after each. Stir in vanilla extract and reduced apple cider (or full cup if not reduced).
  4. Combine the dry ingredients: In a separate medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
  5. Fold the dry into the wet: Add dry ingredients to wet mixture and fold gently with a rubber spatula until just combined. Do not overmix.
  6. Fill the muffin cups: Divide batter evenly among 12 muffin cups, filling each about 3/4 full.
  7. Bake: Place muffin tin in preheated oven and bake for 12-15 minutes, until a toothpick inserted in center comes out clean or with a few moist crumbs.
  8. Cool briefly: Let muffins cool in pan for 2-3 minutes, then transfer to a cooling rack.
  9. Prepare the coating: Mix 1/2 cup sugar and 1 tablespoon cinnamon in a shallow bowl. Melt remaining 1/4 cup butter in another small bowl.
  10. Coat the muffins: Working one at a time, brush warm muffins with melted butter, then roll in cinnamon-sugar mixture until fully coated. Place on cooling rack.

Notes

For best results, reduce the apple cider to concentrate flavor. Do not overmix the batter to avoid dense muffins. Coat muffins while still warm for the coating to stick. Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
