This easy homemade pumpkin spice cold brew concentrate is smooth, naturally flavored, and budget-friendly. Made with simple ingredients like coffee, pumpkin pie spice, and vanilla, it’s perfect for busy mornings and tastes like autumn in a glass.

  • 1 cup coarsely ground coffee beans (medium roast recommended)
  • 4 cups cold, filtered water
  • 2 tablespoons pumpkin pie spice
  • 1 tablespoon vanilla extract
  • Optional: 1-2 tablespoons maple syrup or brown sugar

Instructions

  1. Combine the coffee and spices: In a large mason jar or pitcher, add the coarsely ground coffee and pumpkin pie spice. Stir to mix evenly.
  2. Add the vanilla and water: Pour in the vanilla extract, then slowly add the cold, filtered water. Stir gently for about 30 seconds until combined.
  3. Cover and steep: Put the lid on the jar and refrigerate for 12 to 24 hours. The longer it steeps, the stronger the flavor.
  4. Strain the concentrate: After steeping, line a fine-mesh strainer with cheesecloth or a nut milk bag and place over a clean bowl or pitcher. Slowly pour the coffee mixture through the strainer. Let it drip naturally without pressing or squeezing the grounds.
  5. Store the concentrate: Transfer the strained concentrate to a clean jar or bottle. Refrigerate for up to two weeks.
  6. Serve and enjoy: Fill a glass with ice, pour in about 1/2 cup of concentrate, and top with 1/2 cup of water or milk. Stir and adjust to taste.

Notes

Use a coarse grind for best results. Don’t rush the steeping—12 hours minimum. Avoid squeezing the cheesecloth when straining to prevent bitterness. The flavor improves after a day or two in the fridge. For a caffeine-free version, use decaf coffee beans or chicory root coffee.
