A simple, customizable tonic made with raw apple cider vinegar, ginger, turmeric, and honey. This folk remedy is perfect for cold season and provides a gentle energy lift.

Ingredients

  • 2 cups raw apple cider vinegar (with ‘the mother’)
  • 1/4 to 1/2 cup raw honey
  • 45 inches fresh ginger root, unpeeled and sliced into thin rounds
  • 23 inches fresh turmeric root, unpeeled and sliced
  • 45 garlic cloves, smashed
  • 2 tablespoons fresh horseradish root, peeled and grated
  • 1/2 medium yellow onion, roughly chopped
  • 1 small jalapeño or habanero pepper, sliced in half (seeds removed for less heat)
  • 1 whole lemon, washed and sliced into rounds
  • 23 sprigs fresh rosemary or thyme

Instructions

  1. Prep the aromatics: Wash and scrub ginger and turmeric; slice into thin coins. Smash garlic cloves. Roughly chop onion. Slice lemon into rounds. Slice jalapeño in half lengthwise.
  2. Layer everything in a clean 32-ounce jar: Place ginger and turmeric on bottom, then add garlic, onion, lemon, and jalapeño. Tuck rosemary sprigs down the sides. Pack tightly.
  3. Add horseradish: Grate fresh horseradish directly over the jar and add on top.
  4. Pour in vinegar: Slowly pour raw apple cider vinegar over ingredients until completely submerged, leaving about 1 inch of headspace.
  5. Sweeten: Drizzle raw honey over the top; do not stir.
  6. Seal and shake: Screw lid on tightly and shake vigorously to help honey dissolve.
  7. Infuse: Place jar in a cool, dark place for 14-28 days. Shake once daily for the first week, then every few days. Taste after 2 weeks; let go full 28 days for stronger flavor.
  8. Strain and bottle: After desired potency, strain through a fine-mesh strainer lined with cheesecloth into a bowl. Squeeze out all liquid. Discard solids.
  9. Final sweeten (optional): Taste strained liquid; stir in extra honey if too sharp.
  10. Store: Use a funnel to pour into small glass bottles or jars. Seal tightly and refrigerate. Keeps up to 6 months.

Notes

Don’t peel ginger or turmeric; just scrub well. Avoid plastic containers. Shake jar daily during first week to prevent honey from settling. For a quick version, use a slow cooker on warm for 4-6 hours (but loses raw probiotic benefits).
