  • 4 oz Aged Gouda, Manchego, or sharp Cheddar (hard cheese)
  • 2 oz Gorgonzola or Roquefort (blue cheese, optional)
  • 4 oz Prosciutto, thinly sliced
  • 4 oz Genoa salami or Soppressata
  • 8–10 pieces Crackers (plain water crackers like Carr’s or Ritz) and/or baguette slices
  • 1 handful Red grapes, washed and patted dry
  • 2–3 Fresh figs, halved, or sliced apple/pear
  • 2 tbsp Dried apricots, Mission figs, or Medjool dates
  • 2 tbsp Toasted almonds, candied pecans, or Marcona almonds
  • 2 tbsp Cornichons (tiny French pickles)
  • 2 tbsp Castelvetrano olives
  • 2 tbsp Honey, fig jam, or spicy mustard

Instructions

  1. Prep the Cheese (5 minutes): Take cheese out of fridge 15 minutes before starting. Slice hard cheese into thin, bite-sized triangles or sticks. Leave soft cheese whole or cut into wedges. Wrap each cheese piece individually in fresh parchment paper or cheese paper. Place in a small airtight container or ziplock bag with air pressed out. Store in refrigerator.
  2. Prep the Meats (5 minutes): If using salami stick, slice into thin rounds (about 1/4 inch thick). Lay prosciutto slices flat on parchment paper, then roll into loose cigars or fold into ruffled ribbons. Place meat in a single layer in a small container, separated by parchment paper if stacking. Store in refrigerator.
  3. Prep the Fruit (5 minutes): Wash grapes thoroughly and pat completely dry. Halve figs or slice apple/pear. If using apples or pears, toss with a squeeze of fresh lemon juice to prevent browning. Store washed grapes and other fruit in a separate container lined with a paper towel. Keep dried fruit in a small ziplock bag or container.
  4. Prep the Nuts (3 minutes): If toasting nuts, add almonds or pecans to a dry skillet over medium heat. Shake pan every 30 seconds until fragrant and lightly golden, about 3-4 minutes. Let cool completely before storing in a small airtight container.
  5. Prep the Spreads & Pickles (2 minutes): Spoon honey, fig jam, or mustard into small ramekins or mini prep bowls. Place cornichons and olives into separate small containers.
  6. Store the Crackers (1 minute): Keep crackers in original box or transfer to a sturdy, airtight container. Store in a cool, dry pantry. Do not refrigerate.
  7. Assemble the Final Board (Day of, 5 minutes): Take all components out of fridge about 20 minutes before eating. Arrange cheese on serving board first, placing at different points. Add meats, folding into nice piles. Fill gaps with fruit, nuts, pickles, and ramekins of spreads. Finally, add crackers around the edges.

Notes

The 20-minute rule is non-negotiable: take cheese out of fridge at least 20 minutes before serving. Don’t overcrowd the board; keep each component in its own container. Use a paper towel in the fruit container to absorb excess moisture. Slice cheese when cold, serve when warm. If honey has crystallized, warm the ramekin gently.
