  • 1/2 cup brown sugar, packed
  • 1/3 cup vegetable oil

  • 1 and 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon (optional but recommended)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or non-stick spray. Optionally line with parchment paper.
  2. In a large mixing bowl, mash the bananas with a fork until mostly smooth with a few small lumps.
  3. Add granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk or stir until well combined and glossy.
  4. Add all-purpose flour, baking soda, salt, and cinnamon (if using). Stir gently with a wooden spoon or spatula until just combined. Do not overmix.
  5. Fold in any optional add-ins (e.g., 1/2 cup chopped walnuts or chocolate chips) with a few quick strokes.
  6. Pour batter into prepared pan and spread evenly.
  7. Bake for 50-60 minutes, until a toothpick inserted into the center comes out clean or with a few moist crumbs. If top browns too quickly, tent with foil after 40 minutes.
  8. Cool in pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
