These Easy Severed Finger Sausage Rolls are a fun and quick Halloween dinner that looks like something from a horror movie but comes together in under 30 minutes with simple ingredients like puff pastry, cocktail sausages, and slivered almonds. Perfect for a busy weeknight, they turn an ordinary meal into a memorable, spooky experience.

  • 1 package puff pastry sheets (thawed if frozen)
  • 1 package cocktail sausages (about 20–24 sausages)
  • 1/4 cup slivered almonds
  • 1/4 cup ketchup (plus more for serving)
  • 1 large egg (beaten with 1 tablespoon water)
  • All-purpose flour (for dusting)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Lightly dust a clean counter or cutting board with flour. Unfold the thawed puff pastry sheet.
  3. Using a sharp knife or pizza cutter, slice the pastry sheet lengthwise into strips about 1 inch wide. You should get about 10-12 strips per sheet.
  4. Place one cocktail sausage at the end of a pastry strip. Roll it up, leaving a small gap at one end for the ‘fingertip’. Press the pastry gently to seal.
  5. Take a slivered almond and press it gently into the exposed end of the sausage (the fingertip end) about 1/4 inch deep, at a slight angle, so it looks like a fingernail.
  6. Using a small spoon or your finger, dab a little ketchup at the base of the almond nail and around the ‘cut’ end of the finger.
  7. Brush each wrapped sausage with the beaten egg wash, making sure to get the edges where the pastry overlaps.
  8. Place the baking sheet in the preheated oven and bake for 18-22 minutes, until the pastry is puffed and golden brown.
  9. Let them rest on the baking sheet for 2-3 minutes before serving.
  10. Arrange the fingers on a platter with a small bowl of ketchup for dipping.

Notes

Keep the pastry cold for best results. If almond fingernails fall off during baking, press a new almond into the warm sausage right when they come out of the oven. You can assemble these up to a day ahead and refrigerate; brush with egg wash and bake straight from the fridge, adding 2-3 minutes to the baking time.
