A quick and easy sheet-pan dinner with smoked sausage, bell peppers, and red onions, roasted to perfection in 30 minutes. Perfect for busy weeknights with minimal cleanup.

  • 1 pound smoked sausage or kielbasa, sliced into ½-inch rounds
  • 3 medium bell peppers (any colors), sliced into 1-inch strips
  • 1 large red onion, sliced into ½-inch wedges
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon crushed red pepper flakes (optional)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Preheat your oven to 425°F (220°C). Line a large sheet pan with parchment paper or aluminum foil.
  2. Slice the sausage into ½-inch rounds.
  3. Slice the bell peppers into 1-inch strips and the red onion into ½-inch wedges.
  4. In a large mixing bowl, combine the sliced sausage, peppers, and onions. Add olive oil, minced garlic, dried oregano, smoked paprika, salt, black pepper, and red pepper flakes (if using). Toss until everything is evenly coated.
  5. Spread the mixture onto the prepared sheet pan in a single layer, ensuring pieces are not overcrowded.
  6. Roast for 15 minutes on the middle rack.
  7. Remove the pan from the oven, stir the mixture, and rotate the pan if needed for even browning.
  8. Return to the oven and roast for another 10-15 minutes, until the sausage is browned and the peppers are tender with charred edges.
  9. Remove from the oven and let rest for 2-3 minutes. Garnish with fresh parsley and serve immediately.

Notes

For extra-crispy sausage edges, broil for the last 2 minutes, watching carefully to avoid burning. Do not skip the stirring step halfway through to ensure even cooking. If using leaner sausage like chicken or turkey, adjust cooking time to prevent drying out.
