This easy slow cooker apple butter requires no peeling or coring—just chop, dump, and let the slow cooker work its magic. The result is a silky, deeply flavored spread that tastes like pure fall.

  • 3.5 pounds (1.6 kg) apples (mix of Honeycrisp, Fuji, Gala, and Granny Smith)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 tablespoon apple cider vinegar
  • 1/4 cup (60ml) water

Instructions

  1. Wash apples thoroughly and quarter them, removing any bruised spots. No need to peel or core. Place apple quarters directly into the slow cooker.
  2. In a small bowl, whisk together granulated sugar, brown sugar, cinnamon, nutmeg, cloves, allspice, and salt. Sprinkle evenly over the apples.
  3. Add vanilla extract, apple cider vinegar, and water. Stir well to coat the apples.
  4. Cover and cook on low for 8-10 hours, stirring once after about 4 hours. The apples should be very soft and collapsed into a dark golden-brown mixture.
  5. Turn off the slow cooker and let cool for 10-15 minutes. Use an immersion blender to puree the mixture until completely smooth. (Alternatively, carefully transfer to a regular blender in batches.)
  6. Taste and adjust spices if needed. If the apple butter is too thin, cook with the lid off on low for another 30-60 minutes to thicken.
  7. Let cool to room temperature (it will thicken further as it cools). Transfer to clean mason jars or airtight containers, leaving 1/2 inch headspace.

Notes

Don’t skip the apple cider vinegar—it brightens the flavor without tasting like vinegar. For best results, use a mix of sweet and tart apples. The flavor improves after sitting in the fridge for 24 hours. If using a regular blender, work in small batches and let the mixture cool first to avoid splashing hot liquid.
