This Easy Slow Cooker Beef and Broccoli delivers fork-tender beef and crisp-tender broccoli in a rich, savory-sweet glaze. It’s a set-it-and-forget-it weeknight dinner that tastes better than takeout.

  • 1.5 to 2 pounds flank steak or sirloin steak, thinly sliced against the grain
  • ½ cup low-sodium soy sauce
  • ½ cup beef broth
  • ¼ cup packed brown sugar
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons cornstarch
  • 2 tablespoons cold water
  • 4 cups fresh broccoli florets
  • 34 green onions, sliced
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Slice the beef: Place the flank steak in the freezer for about 20 minutes to firm it up. Then, slice it thinly against the grain into strips about ¼-inch thick.
  2. Make the sauce: In a medium bowl, whisk together the soy sauce, beef broth, brown sugar, sesame oil, rice vinegar, minced garlic, and grated ginger.
  3. Layer the beef: Place the sliced beef in the slow cooker. Pour the sauce over the top and stir to coat every piece evenly.
  4. Cook on low: Cover and cook on low for 3 to 4 hours, until the beef is fork-tender.
  5. Add the broccoli: About 30 minutes before serving, stir in the fresh broccoli florets.
  6. Thicken the sauce: In a small bowl, mix the cornstarch with 2 tablespoons of cold water until smooth. Stir the slurry into the slow cooker. Turn the heat to high and cook uncovered for 10 to 15 minutes, stirring occasionally, until the sauce thickens and becomes glossy.
  7. Finish and serve: Taste and adjust seasoning. Garnish with sliced green onions and sesame seeds. Serve immediately over steamed rice or noodles.

Notes

For best results, slice beef against the grain and add broccoli only in the last 30 minutes to keep it crisp-tender. Use a cornstarch slurry to thicken the sauce. Leftovers can be stored in the refrigerator for up to 4 days or frozen (without broccoli) for up to 3 months.
