Easy Slow Cooker Herb Butter Turkey Breast

This hands-off slow cooker turkey breast is incredibly juicy and flavorful, thanks to a simple herb butter technique. Perfect for a stress-free weeknight dinner, it’s kid-approved and budget-friendly.

  • 1 (2-3 lb) boneless, skin-on turkey breast
  • 4 tablespoons unsalted butter, softened
  • 3 cloves garlic, minced
  • 1 tablespoon fresh rosemary, finely chopped (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
  • 1 teaspoon kosher salt, divided
  • ½ teaspoon freshly ground black pepper, divided
  • ½ cup low-sodium chicken or turkey broth

Instructions

  1. In a small bowl, combine the softened butter, minced garlic, chopped rosemary, thyme leaves, ½ teaspoon salt, and ¼ teaspoon pepper. Mix until well combined.
  2. Pat the turkey breast dry with paper towels. Place it skin side up on a cutting board. Gently loosen the skin from the meat with your fingers, creating a pocket without tearing the skin.
  3. Spread about two-thirds of the herb butter under the skin, directly onto the meat. Spread the remaining butter over the outside of the skin. Season the entire breast with the remaining ½ teaspoon salt and ¼ teaspoon pepper.
  4. Pour the broth into the bottom of a 5-6 quart slow cooker. Place the seasoned turkey breast in the slow cooker, skin side up.
  5. Cover and cook on LOW for 4-5 hours or on HIGH for 2-3 hours, until the internal temperature reaches 165°F (74°C) in the thickest part of the breast.
  6. Carefully remove the turkey from the slow cooker using tongs. Let it rest on a cutting board for 10-15 minutes before slicing against the grain. Serve with the cooking juices spooned over the top.

Notes

For crispier skin, place the cooked turkey under a hot broiler for 2-3 minutes. The turkey can also be shredded for sandwiches. Leftovers keep in the refrigerator for up to 4 days or frozen for up to 3 months.
