  • 4 cups broccoli florets (about 300 g), washed and trimmed
  • 1 tablespoon fresh ginger, minced
  • 2 cloves garlic, minced
  • 1/4 cup low sodium soy sauce (60 ml)
  • 2 tablespoons oyster sauce (optional but recommended)
  • 1 teaspoon brown sugar
  • 1 teaspoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)
  • 2 stalks green onions, sliced thinly (optional)
  • Pinch of red pepper flakes (optional)

Instructions

  1. Place 1 pound of flank steak or sirloin in the freezer for about 15 minutes to firm up. Slice thinly against the grain about 1/8-inch thick.
  2. Wash and cut 4 cups of broccoli into bite-sized florets. Set aside.
  3. In a small bowl, combine 1/4 cup low sodium soy sauce, 2 tablespoons oyster sauce, 1 teaspoon brown sugar, 1 tablespoon minced fresh ginger, and 2 cloves minced garlic. Stir until sugar dissolves and set aside.
  4. In another small bowl, mix 1 tablespoon cornstarch with 2 tablespoons cold water to create a slurry.
  5. Heat 1 tablespoon vegetable oil in a wok or large skillet over medium-high heat until shimmering but not smoking. Add beef slices in a single layer (in batches if needed). Stir-fry for 1-2 minutes until just browned but not fully cooked. Remove beef and set aside.
  6. Add another tablespoon of vegetable oil to the pan. Toss in broccoli florets and stir-fry for 3-4 minutes until bright green and just tender but still crisp. If dry, splash in 1 tablespoon water and cover for 1 minute to steam slightly.
  7. Return beef to the pan with broccoli. Pour in the sauce and stir to coat evenly. Pour cornstarch slurry around edges and stir gently until sauce thickens and clings, about 1 minute.
  8. Turn off heat and drizzle 1 teaspoon sesame oil over stir fry. Toss gently. Garnish with sliced green onions and red pepper flakes if desired.
  9. Serve immediately with steamed rice or noodles.

Notes

Use high heat and do not overcrowd the pan to keep beef tender and broccoli crisp. Slice beef thinly against the grain for best texture. The cornstarch slurry is optional but helps thicken the sauce nicely. For gluten-free, substitute soy sauce with tamari and ensure oyster sauce is gluten-free or use alternatives. Sesame oil should be added at the end to preserve its aroma.
