Festive Cranberry Brie Bites: Easy 3-Ingredient Appetizer

These festive cranberry brie bites in puff pastry are the perfect easy appetizer for holiday gatherings. With just 3 main ingredients and ready in 25 minutes, they look elegant but are embarrassingly simple to make.

  • 1 sheet frozen puff pastry, thawed
  • 4 ounces brie cheese, cold
  • 1/3 cup whole berry cranberry sauce
  • 1 large egg, beaten with 1 tablespoon water
  • Flaky sea salt, for sprinkling
  • Fresh rosemary or thyme, for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the center of the oven. Line your baking sheet with parchment paper or a silicone mat.
  2. On a lightly floured surface, unfold the thawed puff pastry sheet. If it cracks at the folds, press the cracks back together with your fingers. Use a rolling pin to gently roll it into a 10×10-inch square, smoothing out those fold lines.
  3. Cut the pastry into 16 squares (4 rows by 4 rows), each about 2.5 inches. Transfer the squares to your prepared baking sheet, spacing them about 1 inch apart.
  4. Cut your cold brie into 16 equal pieces. Keep the rind on. If the brie starts getting too soft, pop it in the freezer for 5 minutes.
  5. Place one piece of brie in the center of each pastry square. Using a small spoon or cookie scoop, add about 1 teaspoon of cranberry sauce on top of each piece of brie.
  6. In a small bowl, whisk the egg with 1 tablespoon of water until well combined. Using a pastry brush, gently brush the exposed edges of each pastry square with the egg wash. Be careful not to get egg wash on the brie or cranberry sauce.
  7. Sprinkle a tiny pinch of flaky sea salt over each bite. If using fresh herbs, place a small rosemary sprig or a few thyme leaves on top of the cranberry sauce.
  8. Place the baking sheet in the preheated oven and bake for 14-16 minutes, until the pastry is puffed up and golden brown, and the brie is visibly melted and bubbly.
  9. Let the bites rest on the baking sheet for 3-5 minutes before serving.
  10. Using a spatula, carefully transfer the bites to a serving platter. Arrange them in a single layer and serve immediately while the brie is still warm and gooey.

Notes

For best results, use cold brie to prevent it from melting into a puddle. Assemble up to 2 hours ahead and refrigerate. To freeze, assemble on a baking sheet, freeze solid, then transfer to a freezer bag; bake from frozen, adding 5-7 minutes. Reheat leftovers in a 350°F oven for 5-7 minutes, not the microwave.
