Flavorful Firecracker Jalapeño Bacon Burger Sliders Easy Recipe with Chipotle Aioli

These sliders combine spicy jalapeños, smoky bacon, and creamy chipotle aioli for a quick and flavorful bite perfect for gatherings and casual meals.

  • 1 lb ground beef (80/20 blend preferred for juiciness)
  • 45 fresh jalapeños, finely chopped (remove seeds for less heat)
  • 8 slices thick-cut bacon, cooked crisp and chopped
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • Salt and freshly ground black pepper, to taste
  • 12 slider buns, preferably brioche or potato buns
  • Butter, for toasting buns
  • ½ cup mayonnaise
  • 12 chipotle peppers in adobo sauce, minced
  • 1 tbsp fresh lime juice
  • 1 clove garlic, minced
  • Salt, to taste
  • Optional toppings: cheddar or pepper jack cheese slices, pickled red onions, fresh cilantro leaves

Instructions

  1. Cook the bacon until crisp, either in a skillet over medium heat or on a baking sheet at 400°F for 15-20 minutes. Drain on paper towels and chop roughly.
  2. In a small bowl, combine ½ cup mayonnaise, minced chipotle peppers, lime juice, garlic, and a pinch of salt. Stir well and taste. Adjust chipotle or lime juice as desired. Cover and refrigerate.
  3. In a large bowl, add ground beef, finely chopped jalapeños, smoked paprika, garlic powder, salt, and pepper. Toss in the chopped bacon. Gently mix with your hands until just combined.
  4. Divide the mixture into 12 equal portions (about 2 oz each). Shape into small, slightly flattened patties and press a small dimple in the center of each patty.
  5. Heat a skillet or grill pan over medium-high heat. Add a little oil if needed. Cook patties for 3-4 minutes per side or until internal temperature reaches 160°F. Add cheese slices during the last minute if using and cover to melt.
  6. Butter the insides of the slider buns lightly and toast them in a skillet or under the broiler until golden and crisp.
  7. Spread chipotle aioli on each bun bottom. Place the patty on top, add optional toppings like pickled red onions or cilantro, and cap with the top bun.
  8. Serve immediately. Leftovers can be reheated gently in a skillet.

Notes

Do not overmix the meat to keep patties tender. Press a dimple in patties to prevent puffing. Adjust jalapeño seeds to control heat. Cook bacon ahead to save time. Chipotle aioli is best made a few hours ahead to meld flavors.
