  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 700 grams), pounded slightly for even cooking
  • 2 tablespoons olive oil (extra virgin preferred)
  • 2 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • ½ cup chopped sun-dried tomatoes packed in oil
  • 1 cup chicken broth (240 ml), homemade or low-sodium store-bought
  • 1 cup heavy cream (240 ml)
  • ½ cup freshly grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (oregano, basil, thyme combo)
  • Pinch of red pepper flakes (optional)
  • Salt and pepper to taste
  • Handful of fresh basil or parsley, chopped for garnish

Instructions

  1. Pat the 4 chicken breasts dry with paper towels. Place each between two sheets of parchment or plastic wrap and gently pound with a meat mallet or rolling pin until about ½ inch thick. Season both sides with salt and pepper. (Estimate: 10 minutes)
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. When hot, add the chicken breasts and cook for 4-5 minutes per side until golden brown and cooked through (internal temperature should reach 165°F / 74°C). Remove chicken to a plate and cover loosely with foil to keep warm.
  3. In the same skillet, reduce heat to medium and add 2 tablespoons butter. When melted, add 3 cloves minced garlic and sauté for about 30 seconds until fragrant (don’t let it burn!).
  4. Stir in ½ cup chopped sun-dried tomatoes and cook for 1 minute to release their flavor.
  5. Pour in 1 cup chicken broth, scraping the bottom of the pan with a wooden spoon to lift any browned bits. Let it simmer for 3-4 minutes to reduce slightly.
  6. Stir in 1 cup heavy cream, ½ cup grated Parmesan, 1 teaspoon dried Italian herbs, and a pinch of red pepper flakes (optional). Simmer gently for 5-7 minutes, stirring occasionally, until sauce thickens enough to coat the back of a spoon. Taste and adjust seasoning with salt and pepper.
  7. Return chicken breasts to the skillet, spoon sauce over them, and let everything warm together for 2-3 minutes so the flavors meld.
  8. Sprinkle chopped fresh basil or parsley on top before serving.

Notes

Do not overcrowd the pan when searing chicken to ensure a golden crust. Use fresh garlic and avoid burning it. Simmer the sauce gently to prevent cream from curdling. Adjust seasoning at the end as flavors intensify during reduction. If sauce is too thick, add a splash of broth to loosen. Leftovers reheat best gently with added broth or cream to maintain sauce consistency.
