These fluffy almond flour pumpkin muffins are proof that gluten-free baking doesn’t have to be a compromise. They’re tender, flavorful, and incredibly easy to make, perfect for fall mornings or a healthy snack.

  • 2 cups (200g) almond flour (finely ground, blanched)
  • 1 cup (240g) pumpkin puree (100% pure, not pie filling)
  • 3 large eggs (room temperature)
  • 1/3 cup (80ml) pure maple syrup
  • 3 tablespoons melted coconut oil
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Optional: 1/2 cup dark chocolate chips, 1/2 cup chopped pecans or walnuts, pepitas for topping

Instructions

  1. Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or grease with coconut oil.
  2. In a large bowl, whisk the eggs vigorously for about 2 minutes until frothy and pale yellow.
  3. Add pumpkin puree, maple syrup, melted coconut oil, and vanilla extract to the eggs. Whisk until smooth and well combined.
  4. In a separate small bowl, whisk together almond flour, pumpkin pie spice, cinnamon, baking soda, and salt. Break up any clumps.
  5. Add dry ingredients to wet ingredients. Fold gently with a spatula until just combined. Do not overmix.
  6. Divide batter evenly among the 12 muffin cups, filling each about 3/4 full. Sprinkle tops with optional pepitas, nuts, or cinnamon sugar.
  7. Bake for 18-22 minutes, until tops are golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs.
  8. Let muffins cool in the pan for 5 minutes, then transfer to a cooling rack to cool completely.

Notes

Room temperature eggs are crucial for lift. Do not overmix the batter. Let muffins cool completely before storing. For best results, use finely ground blanched almond flour, not almond meal. Muffins stay moist for 3-4 days at room temperature in an airtight container, or freeze for up to 3 months.
