  • 1/3 cup pecans or walnuts, toasted and roughly chopped
  • 1/4 cup crumbled feta cheese (optional)
  • 1/4 cup thinly sliced red onion (optional)
  • 1/4 cup tahini (stir well before measuring)
  • 2 tablespoons maple syrup (or honey)
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons olive oil
  • 2–3 tablespoons warm water (to thin)
  • 1 small garlic clove, minced (optional)
  • 1/4 teaspoon salt, plus more to taste
  • Pinch of black pepper

Instructions

  1. Prep the kale: Wash the kale leaves thoroughly and dry them well. Remove the tough stems and tear or chop the leaves into bite-sized pieces. Place them in a large mixing bowl.
  2. Make the dressing: In a small bowl or jar, whisk together the tahini, maple syrup, lemon juice, olive oil, minced garlic (if using), salt, and pepper. Add warm water, one tablespoon at a time, whisking until smooth and drizzle-able. Taste and adjust seasoning. Set aside.
  3. Massage the kale: Pour about half the dressing over the kale. Using clean hands, grab handfuls of kale and squeeze, rub, and work the dressing into the leaves for 2–3 minutes until the leaves soften and darken.
  4. Toast the nuts: Heat a small skillet over medium heat. Add the pecans or walnuts and cook, stirring frequently, for 3–4 minutes until fragrant and lightly browned. Transfer to a plate to cool.
  5. Assemble the salad: Add the sliced apple, dried cranberries, toasted nuts, red onion (if using), and feta (if using) to the massaged kale. Drizzle the remaining dressing over the top.
  6. Toss and serve: Toss everything together gently until evenly coated. Taste and adjust seasoning. Serve immediately, or let it sit for 15 minutes to let flavors meld.

Notes

Don’t skip massaging the kale—it’s the key to a tender, non-bitter salad. Dry the kale well to avoid watery dressing. Toast nuts in a dry pan and watch them closely to prevent burning. Slice apples just before serving to prevent browning. For best flavor, let the dressed salad rest for 10–15 minutes before serving.
