These fudgy brownie bites are shaped like tiny football helmets with a chocolate buttercream face mask and white stripe. They are quick, easy, and perfect for game day parties.

  • 1/2 cup unsalted butter, melted and slightly cooled
  • 1 cup granulated sugar
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 cup unsalted butter, softened to room temperature
  • 1 cup powdered sugar, sifted
  • 2 tablespoons unsweetened cocoa powder
  • 12 tablespoons heavy cream or milk
  • 1/2 teaspoon vanilla extract
  • White icing or melted white chocolate, for the helmet stripe
  • Orange or yellow decorating gel (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 24-cup mini muffin pan generously with non-stick spray or butter.
  2. In a large bowl, whisk together melted butter and granulated sugar until well combined. Add eggs one at a time, whisking vigorously after each addition. Stir in vanilla extract.
  3. In a separate bowl, sift together cocoa powder, flour, salt, and baking powder. Add dry ingredients to wet ingredients and fold gently with a rubber spatula until just combined.
  4. Drop a heaping tablespoon of batter into each greased mini muffin cup, filling about three-quarters full.
  5. Bake for 10 to 12 minutes, until edges are set but centers are still soft. Let cool in pan for 5 minutes, then transfer to a cooling rack to cool completely.
  6. Once cool, use a sharp paring knife to cut a small, shallow slit about 1/4-inch deep across the top of each brownie dome.
  7. For the frosting: In a medium bowl, beat softened butter until smooth. Add sifted powdered sugar and cocoa powder, beat on low until combined. Add vanilla and 1 tablespoon heavy cream, beat on medium-high for 2 minutes until fluffy. Adjust consistency with additional cream or powdered sugar as needed.
  8. Transfer frosting to a piping bag or zip-top bag with a tiny corner snipped off. Pipe a thin line of frosting along the slit, then pipe 2-3 vertical lines and a horizontal line to form a face mask cage.
  9. Pipe a thin stripe of white icing or melted white chocolate down the center of each brownie dome, starting from the top and stopping just above the slit.
  10. Let decorated brownie bites sit for 10 minutes to set. Serve at room temperature.

Notes

Do not overbake; brownies should be slightly underdone for best texture. Chill brownies for 10 minutes if too soft to cut. Use a sharp knife for clean slits. Frosting can be scraped off and redone if needed.
