A quick and easy high-protein egg bake made with cottage cheese, eggs, and vegetables. Ready in under 20 minutes, this creamy and satisfying breakfast is perfect for meal prep and busy mornings.

  • 1 cup cottage cheese (full-fat or 2%)
  • ½ cup shredded cheddar cheese (sharp cheddar recommended)
  • ¼ cup milk (dairy, almond, oat, or any kind)

  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ½ cup chopped bell peppers (any color, mix of red and green recommended)
  • ½ cup chopped spinach (fresh or frozen, thawed and squeezed if frozen)
  • ¼ cup chopped green onions
  • ½ cup cooked turkey sausage or bacon (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Spray an 8×8 inch baking dish with non-stick cooking spray or grease with butter.
  2. Prep the vegetables: Chop bell peppers into small pieces (about ¼ inch), roughly chop spinach, and slice green onions. If using meat, cook it now and let cool slightly.
  3. Blend half the cottage cheese: Add ½ cup cottage cheese to a blender or food processor. Pulse until smooth and creamy, about 15-20 seconds. Leave the other ½ cup unblended.
  4. Whisk the eggs: In a medium mixing bowl, crack all 8 eggs and whisk vigorously for about 30 seconds until well combined and slightly frothy.
  5. Add the dairy: Pour in the blended cottage cheese, unblended cottage cheese, shredded cheddar, and milk. Whisk until uniform.
  6. Season: Add salt, pepper, garlic powder, and onion powder. Whisk again.
  7. Fold in the vegetables: Gently stir in chopped bell peppers, spinach, and green onions. If using meat, fold that in too. Do not overmix.
  8. Pour the mixture into the prepared baking dish. Gently shake to spread evenly.
  9. Bake for 18-22 minutes, until edges are golden brown and center is just set (jiggles slightly like cheesecake).
  10. Let rest for 5 minutes before serving. This allows the bake to set properly.

Notes

For best results, use room temperature eggs. Blending half the cottage cheese creates a creamy texture. Let the bake rest for 5 minutes after baking to set properly. If top browns too fast, tent with foil. Store in refrigerator for up to 4 days. Reheat in oven at 350°F for 10 minutes or microwave for 45 seconds. Freeze individual portions for up to 2 months.
