  • 1 cup (240 ml) pure elderberry syrup
  • 1/4 cup (85 g) raw honey
  • 3 tablespoons (about 30 g) grass-fed gelatin
  • 1/2 cup (120 ml) filtered water
  • 1 tablespoon (15 ml) lemon juice
  • 1 teaspoon vitamin C powder (optional)

Instructions

  1. Bloom the gelatin: Sprinkle 3 tablespoons of gelatin over 1/2 cup of cold filtered water in a mixing bowl. Let sit for 5 minutes until thick and jelly-like.
  2. Warm elderberry syrup and honey: Pour 1 cup elderberry syrup and 1/4 cup raw honey into a small saucepan. Heat over low heat, stirring gently until honey dissolves. Avoid boiling.
  3. Add lemon juice and optional vitamin C powder: Remove from heat and stir in 1 tablespoon lemon juice and 1 teaspoon vitamin C powder if using.
  4. Combine gelatin and syrup mixture: Slowly pour the warm elderberry-honey mixture into the bloomed gelatin. Whisk continuously until smooth and lump-free.
  5. Pour into molds: Transfer mixture into silicone gummy molds or a parchment-lined small baking dish.
  6. Refrigerate to set: Chill in the refrigerator for at least 2 to 3 hours until firm but chewy.
  7. Unmold and store: Pop gummies out of molds or cut into squares if using a dish. Store in an airtight container in the fridge for up to 2 weeks.

Notes

Keep heat low when warming honey to preserve enzymes. Bloom gelatin properly to avoid lumps. Adjust gelatin amount for preferred gummy firmness. Store gummies in airtight container; dust with cornstarch or arrowroot powder to prevent sticking.
