Instructions

  1. Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  2. In a large mixing bowl, combine 1 cup natural creamy peanut butter, 1/2 cup pure maple syrup, 1 large egg (room temperature), and 1 teaspoon vanilla extract. Stir with a wooden spoon until smooth and well combined.
  3. Add 1 1/4 cups whole wheat pastry flour, 1/2 teaspoon baking soda, and 1/4 teaspoon salt (if using). Stir until a stiff dough forms. If the dough seems too dry, add 1 tablespoon of milk or water. If it’s too sticky, add another tablespoon of flour.
  4. Scoop about 2 tablespoons of dough and roll it into a ball. Place it on the prepared baking sheet. Gently flatten it slightly with your palm. Using a small offset spatula or butter knife, gently pinch and shape one side of the cookie to form a slight point (the turkey’s head). On the opposite side, pinch two small nubs for the drumsticks. Repeat with the remaining dough, spacing the cookies about 2 inches apart. You should get about 12 cookies.
  5. Bake for 10-12 minutes, or until the edges are lightly golden and the tops look set. The cookies will still be soft in the center—they’ll firm up as they cool.
