A quick and healthy turkey white bean chili that comes together in under 30 minutes. It’s creamy, flavorful, and perfect for busy weeknights or meal prep.

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground turkey (93% lean)
  • 1 medium green bell pepper, diced
  • 1 jalapeño, seeded and minced (optional)
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 can (14.5 ounces) fire-roasted diced tomatoes
  • 1 can (4 ounces) diced green chiles, mild
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 can (15 ounces) great northern beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • Fresh cilantro, chopped (for topping)
  • Diced avocado (for topping)
  • Lime wedges (for serving)
  • Plain Greek yogurt or sour cream (for topping)
  • Shredded cheddar cheese (optional, for topping)
  • Crushed tortilla chips (for topping)

Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add diced onion and cook for 4-5 minutes until soft and translucent.
  2. Add minced garlic and cook for 30 seconds until fragrant.
  3. Add ground turkey and break it up with a wooden spoon. Cook without stirring for 2 minutes, then stir and cook for 5-6 minutes until no longer pink and browned bits form on the bottom.
  4. Sprinkle chili powder, cumin, smoked paprika, oregano, salt, black pepper, and cayenne (if using) over the turkey. Stir and cook for 1 minute to bloom the spices.
  5. Stir in diced green bell pepper and minced jalapeño (if using). Cook for 2 minutes.
  6. Pour in fire-roasted diced tomatoes with juices, diced green chiles, and chicken broth. Stir, scraping up browned bits from the bottom.
  7. Add drained cannellini beans and great northern beans. Stir gently. Bring to a gentle simmer, then reduce heat to medium-low. Cook uncovered for 15 minutes, stirring occasionally.
  8. Remove about 1 cup of chili (mostly beans and some liquid) and mash with a fork or blend with an immersion blender. Stir back into the pot to thicken.
  9. Taste and adjust seasoning with more salt, lime juice, or cumin as needed.
  10. Ladle into bowls and top with desired toppings such as Greek yogurt, avocado, cilantro, lime juice, cheese, or tortilla chips. Serve hot.

Notes

For best flavor, bloom the spices in hot oil before adding liquids. Use 93% lean ground turkey to avoid dryness. The chili thickens as it sits and tastes even better the next day. Freezes well for up to 3 months.
