Instructions

  1. Prep the chicken (5 minutes): If using a whole chicken, remove giblets, rinse, pat dry, and season generously with salt and pepper. If using thighs, season and set aside.
  2. Sauté the vegetables (10 minutes): Heat 2 tablespoons olive oil or butter in a Dutch oven over medium heat. Add onion, carrots, and celery. Cook until onions are translucent and vegetables soften, about 5-7 minutes. Add garlic and cook 1 minute more.

  9. Make dumpling dough (10 minutes): In a bowl, whisk flour, baking powder, and salt. Cut in cold butter until mixture resembles coarse crumbs. Make a well, pour in cold milk, and stir with a fork until just combined. Fold in parsley.
  10. Drop dumplings (5 minutes): Bring broth to a gentle simmer. Drop rounded tablespoonfuls of dough into broth. Do not crowd.
  11. Cook dumplings (15-18 minutes): Cover tightly and cook without peeking for 12 minutes. Check one dumpling; if still doughy, cook 3-5 minutes more.
  12. Rest and serve (5 minutes): Turn off heat, let sit 5 minutes. Ladle into bowls, garnish with parsley and black pepper.
