This Homemade Iced Pumpkin Spice Latte with Brown Sugar Syrup is everything you want in a fall drink. It is cozy, flavorful, and surprisingly easy to make, with a brown sugar syrup that adds depth and a shaking technique that creates perfect frothy texture without any special equipment.

Ingredients

Scale
  • 1 cup brown sugar (packed, light or dark)
  • 1 cup water
  • 1 cinnamon stick (or 1 teaspoon ground cinnamon)
  • 1 teaspoon vanilla extract (pure vanilla extract preferred)
  • Pinch of salt
  • 2 tablespoons pumpkin puree (not pumpkin pie filling)
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground nutmeg (freshly grated if possible)
  • 1/8 teaspoon ground cloves
  • Pinch of black pepper
  • 1 cup strong brewed coffee (or 2 shots of espresso)
  • 1/2 cup milk of your choice (whole milk, oat milk, or almond milk)
  • 23 tablespoons brown sugar syrup (adjust to taste)
  • Ice cubes
  • Whipped cream for topping (optional)
  • Extra cinnamon for dusting

Instructions

  1. Make the Brown Sugar Syrup: In a small saucepan, combine 1 cup brown sugar and 1 cup water. Place over medium heat and whisk gently until the sugar dissolves completely, about 2-3 minutes. Add the cinnamon stick and bring to a gentle simmer. Let it simmer for 5 minutes, stirring occasionally. Remove from heat and stir in 1 teaspoon vanilla extract and a pinch of salt. Let cool completely before using. Remove cinnamon stick if desired.
  2. Make the Pumpkin Spice Paste: In a small bowl, combine 2 tablespoons pumpkin puree, 1 teaspoon ground cinnamon, 1/2 teaspoon ground ginger, 1/4 teaspoon ground nutmeg, 1/8 teaspoon ground cloves, and a pinch of black pepper. Whisk until well combined. If too thick, add a teaspoon of water to thin slightly.
  3. Brew Your Coffee: Brew a strong cup of coffee using your preferred method (dark roast recommended) or pull 2 shots of espresso. Let cool slightly before assembling.
  4. Shake It Up: Add the cooled coffee, 1/2 cup milk, 2-3 tablespoons brown sugar syrup, and the pumpkin spice paste to a mason jar. Screw the lid on tightly and shake vigorously for about 30 seconds until frothy and well combined.
  5. Assemble the Latte: Fill a tall glass with ice cubes. Pour the shaken latte mixture over the ice. Top with whipped cream if desired and dust with extra cinnamon. Serve immediately.

Notes

Don’t skip the shaking step—it emulsifies the pumpkin puree with the milk and coffee for a smooth texture. Use room temperature ingredients for better mixing. Adjust sweetness to taste starting with 2 tablespoons of syrup. Make the syrup ahead of time for quick assembly. Use 100% pure pumpkin puree, not pumpkin pie filling. For a dairy-free version, use oat milk which froths best. For a hot version, skip the ice and heat the milk before shaking.
