Caramelized maple-roasted Brussels sprouts with fresh pomegranate seeds, a quick and easy side dish that turns picky eaters into veggie lovers. Perfect for weeknights or holiday feasts.

  • 1.5 pounds Brussels sprouts (about 6 cups, trimmed and halved)
  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon kosher salt (or 3/4 teaspoon table salt)
  • 1/2 teaspoon freshly ground black pepper
  • 1 large pomegranate (seeds removed, about 1 cup arils)
  • Optional: chopped pecans or walnuts, crumbled feta cheese

Instructions

  1. Preheat your oven to 425°F (218°C). Line a large baking sheet with parchment paper or aluminum foil.
  2. Rinse Brussels sprouts under cold water and pat dry. Trim off the tough, woody ends and remove any yellow or damaged outer leaves. Cut each sprout in half lengthwise through the stem; quarter any large sprouts so they are roughly the same size.
  3. In a large mixing bowl, combine the halved Brussels sprouts, olive oil, maple syrup, salt, and pepper. Use your hands to toss until each sprout is well coated.
  4. Spread the coated Brussels sprouts in a single layer on the prepared baking sheet, cut sides facing down as much as possible. Avoid overcrowding.
  5. Roast for 10 minutes. Remove the pan, toss the sprouts with a spatula, and spread back into a single layer. Return to the oven and roast for another 10-15 minutes, until deep golden-brown and tender (a fork should slide in easily).
  6. Transfer the roasted Brussels sprouts to a serving platter or bowl. Sprinkle fresh pomegranate seeds over the top. Toss gently or leave scattered on top for presentation.
  7. Serve immediately warm. If making ahead, keep warm in a 200°F oven for up to 30 minutes, adding pomegranate seeds just before serving.

Notes

For best caramelization, ensure Brussels sprouts are dry before roasting and arrange cut sides down. If sprouts brown too quickly, tent with foil. Pomegranate seeds can be substituted with dried cranberries or fresh orange segments. For an air fryer version, cook at 375°F for 12-15 minutes, shaking halfway.
