  • 8 oz block feta cheese (drained and patted dry)
  • 1/2 cup plain Greek yogurt (2% or full fat)
  • 1/3 cup roasted red peppers (from a jar, drained)
  • 1 tablespoon olive oil
  • 1 small clove garlic
  • Juice of half a lemon
  • Salt and black pepper to taste
  • 1 cup plain Greek yogurt (for ranch dip)
  • 1 packet ranch seasoning mix
  • 1 tablespoon fresh lemon juice (for ranch dip)
  • 1–2 tablespoons milk (or water) to thin ranch dip, if needed
  • 1 large English cucumber, sliced into rounds or half-moons
  • 2 cups mixed crunchy vegetables (snap peas, bell pepper strips, cherry tomatoes, radish slices)
  • 4 oz thinly sliced turkey breast (nitrate-free, if possible)
  • 4 oz part-skim mozzarella pearls
  • 1/2 cup marinated artichoke hearts, drained
  • 1/2 cup mixed olives (kalamata and green), pitted
  • 1 cup fresh berries (strawberries, blueberries, or raspberries)
  • 2 tablespoons honey or balsamic glaze
  • 2–3 oz high-quality dark chocolate (70% cacao or higher) (optional)
  • Fresh herbs for garnish (rosemary, thyme, or basil)

Instructions

  1. Make the whipped feta and roasted red pepper dip: Crumble the block feta into a food processor. Add the Greek yogurt, drained roasted red peppers, olive oil, garlic clove, and lemon juice. Pulse a few times, then process for about 60 seconds until completely smooth and creamy. Scrape down sides as needed. Season with a pinch of salt and black pepper to taste. Transfer to a small serving bowl. Can be made up to 3 days in advance and stored covered in the fridge.
  2. Make the Greek yogurt ranch dip: In a small bowl, whisk together the Greek yogurt, ranch seasoning mix, and lemon juice. If too thick, add 1-2 tablespoons of milk or water and whisk again. Taste and adjust seasoning. Transfer to a small serving bowl. Keeps in the fridge for up to a week.
  3. Prep the vegetables: Wash and dry all produce. Slice the English cucumber into 1/4-inch rounds. Cut bell peppers into thin strips. Halve cherry tomatoes if large. Trim snap peas if needed. Slice radishes into thin rounds. Arrange on a plate or container. Can be done a few hours ahead; keep covered with a damp paper towel in the fridge.
  4. Assemble the board: Place the two bowls of dip on a large board or platter. Fill in the gaps with turkey slices (folded or rolled), mozzarella pearls, olives, artichoke hearts, and fresh berries. Arrange prepped vegetables in remaining spaces, overlapping cucumber slices if desired.
  5. Add finishing touches: Drizzle honey or balsamic glaze over mozzarella pearls or berries. Sprinkle fresh herbs over the board. Tuck in dark chocolate pieces if using.
  6. Serve immediately or hold for up to 2 hours. Best served at room temperature. If prepped ahead, take dips out of the fridge 20 minutes before serving.

Notes

Pat feta dry to avoid watery dip. Let dips come to room temperature before serving for best flavor. Go easy on salt as feta and ranch seasoning are salty. Arrange items in ‘stations’ around the board for easy access. Dips can be made up to 3 days ahead; vegetables can be prepped the night before.
