One Pot Creamy Chicken and Wild Rice Soup (Easy Recipe)

  • 1 medium yellow onion, diced (about 1 cup)
  • 2 medium carrots, peeled and diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1/3 cup all-purpose flour
  • 6 cups low-sodium chicken broth
  • 1 cup wild rice blend
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and black pepper to taste (start with 1 teaspoon salt and 1/2 teaspoon pepper)
  • 3 cups cooked, shredded chicken (rotisserie chicken recommended)
  • 1 cup half-and-half
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook for 5-7 minutes, stirring occasionally, until softened and onions are translucent. Add the minced garlic and cook for 30 seconds until fragrant.
  2. Sprinkle the flour over the softened vegetables. Stir constantly for about 2 minutes to cook out the raw flour taste. The mixture will look pasty and clumpy.
  3. Slowly pour in the chicken broth while stirring continuously to prevent lumps. Scrape the bottom of the pot to release any browned bits. Add the wild rice blend, dried thyme, dried rosemary, and bay leaf. Stir together. Bring to a boil over medium-high heat.
  4. Reduce heat to low, cover the pot, and simmer gently for 45-50 minutes, or until the rice is tender and starting to split open. Stir every 15 minutes to prevent sticking.
  5. Remove the bay leaf and discard. Stir in the shredded chicken and half-and-half. Cook for another 5 minutes, uncovered, until warmed through. Season with salt and pepper to taste.
  6. Ladle the soup into bowls and top with fresh parsley. Serve hot with crusty bread or a side salad.

Notes

Don’t skip sautéing the vegetables in butter—it builds the aromatic foundation. If using rotisserie chicken, remove the skin before shredding to avoid greasy soup. For best results, cook raw rice in the broth to release starch and thicken the soup naturally. The soup will thicken as it sits; thin with broth when reheating.
