  • ½ cup sun-dried tomatoes (drained and chopped)
  • 1 medium yellow onion (diced)
  • 4 cloves garlic (minced)

  • 1 cup heavy cream
  • 9 oz refrigerated cheese tortellini
  • 3 cups fresh spinach (loosely packed)
  • ½ cup grated Parmesan cheese (plus more for serving)
  • 1 teaspoon dried Italian seasoning
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper (to taste)
  • 1 tablespoon olive oil

Instructions

  1. Heat olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add Italian sausage (casings removed) and break it up with a spoon. Cook until browned and no pink remains, about 5 minutes. Transfer sausage to a plate with a slotted spoon, leaving drippings in the pot.
  2. Reduce heat to medium. Add diced onion and cook until softened, about 3 minutes. Add minced garlic and cook for 30 seconds until fragrant.
  3. Stir in chopped sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute.
  4. Pour in chicken broth, scraping the bottom of the pot with a wooden spoon to deglaze. Bring to a gentle boil, then reduce heat to a simmer. Let simmer for 5 minutes.
  5. Add tortellini to the simmering broth. Cook according to package directions (usually 3-4 minutes for refrigerated tortellini), stirring occasionally.
  6. Reduce heat to low. Pour in heavy cream and stir gently. Add fresh spinach in handfuls, stirring until wilted, about 1-2 minutes.
  7. Return cooked sausage to the pot. Add grated Parmesan cheese and stir until melted. Season with salt and black pepper to taste.
  8. Serve immediately, topped with extra Parmesan and black pepper. Enjoy with crusty bread.

Notes

For best results, brown the sausage properly to develop deep flavor. Add cream at low heat to prevent curdling. Cook tortellini just until al dente as it will continue cooking in the hot broth. Season gradually due to salt in sausage, broth, and Parmesan. For meal prep, undercook tortellini slightly or store separately. Soup thickens upon standing; add a splash of broth or water when reheating.
