Quick and easy candy corn popcorn balls made with air fryer popcorn and jumbo marshmallows for a thick, chewy coating. Perfect for Halloween parties, Thanksgiving dessert tables, or a fun fall treat with the kids.

Ingredients

Scale
  • 1/2 cup popcorn kernels
  • 1 tablespoon coconut oil
  • 1/4 teaspoon salt
  • 10 ounces jumbo marshmallows
  • 3 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup candy corn
  • 1/2 cup mini chocolate chips (optional)
  • 1/4 cup festive sprinkles

Instructions

  1. Preheat air fryer to 400°F (200°C). Add popcorn kernels and coconut oil to the air fryer basket. Shake to coat. Cook for 8-10 minutes, shaking halfway through, until pops slow to about 2 seconds apart.
  2. Transfer popped popcorn to a large bowl. Remove any unpopped kernels. Sprinkle with salt while still warm. Set aside.
  3. In a medium saucepan over low heat, melt the butter. Add jumbo marshmallows and stir constantly with a wooden spoon until melted and smooth, about 5-7 minutes. Remove from heat and stir in vanilla extract.
  4. Pour melted marshmallow mixture over the popcorn. Fold gently with a silicone spatula until every kernel is coated. Work quickly as the mixture sets fast.
  5. Sprinkle in candy corn, chocolate chips, and sprinkles. Fold gently to distribute evenly. If mixture becomes too stiff, microwave for 10 seconds to soften.
  6. Grease hands with butter or cooking spray. Take about 1/2 cup of the mixture and press firmly into a ball. Place on a parchment-lined baking sheet. Repeat with remaining mixture.
  7. Let popcorn balls cool at room temperature for about 15 minutes until set. For faster setting, refrigerate for 5 minutes.

Notes

Use fresh jumbo marshmallows for best texture. Work quickly once marshmallow mixture is added to popcorn. Grease hands generously to prevent sticking. For dairy-free, use plant-based butter and vegan marshmallows. Store in an airtight container at room temperature for up to 3 days. Freeze for up to 2 months.
