This perfect cheesy scalloped potato casserole is rich, creamy, and cheesy with a golden-brown top. Made with simple ingredients like potatoes, cream, and cheese, it’s a foolproof crowd-pleaser that’s perfect for holidays or cozy weeknight dinners.

  • 3 pounds Russet potatoes (about 6 medium), peeled and sliced into ⅛-inch rounds
  • 2 cups heavy cream
  • 1 cup whole milk
  • 2 cups sharp cheddar cheese, freshly grated
  • 1 cup Gruyère cheese, freshly grated
  • 3 tablespoons unsalted butter
  • 3 cloves garlic, minced
  • 3 tablespoons all-purpose flour
  • 1½ teaspoons salt (Diamond Crystal kosher salt; reduce to 1 teaspoon if using table salt)
  • ½ teaspoon black pepper, freshly ground
  • 1 teaspoon fresh thyme leaves (optional)
  • ¼ teaspoon nutmeg, freshly grated

Instructions

  1. Preheat your oven to 375°F (190°C). Position a rack in the center. Butter your 9×13 baking dish generously, including the sides.
  2. Peel and slice the potatoes. Rinse the sliced potatoes in cold water to remove excess starch. Drain well and pat dry with a clean kitchen towel.
  3. Make the cream sauce. In a medium saucepan over medium heat, melt 3 tablespoons of butter. Add the minced garlic and cook for 30 seconds until fragrant, stirring constantly. Whisk in the flour and cook for 1 minute, stirring constantly.
  4. Slowly pour in the heavy cream and milk while whisking continuously. Keep whisking until the mixture thickens slightly, about 3-4 minutes. It should coat the back of a spoon but still be pourable.
  5. Remove from heat and stir in the cheeses. Reserve about ½ cup of the cheddar for the top. Add the remaining cheddar and all the Gruyère to the sauce. Stir until completely melted and smooth. Season with salt, pepper, thyme, and nutmeg. Taste and adjust seasoning.
  6. Layer the potatoes. Spread one-third of the sliced potatoes evenly in the prepared dish. Pour one-third of the cheese sauce over the top. Repeat with another layer of potatoes and sauce, then a final layer of potatoes. Pour the remaining sauce over the top and spread it evenly.
  7. Cover with foil and bake for 40 minutes.
  8. Remove the foil and sprinkle the reserved cheddar cheese over the top. Bake uncovered for another 20-25 minutes, until the cheese is bubbly and golden brown, and the potatoes are tender when pierced with a knife.
  9. Let it rest for 10-15 minutes before serving.

Notes

Slice potatoes uniformly for even cooking. Don’t skip rinsing the potatoes to remove excess starch. Let the casserole rest for 10-15 minutes before serving to allow the sauce to set. This casserole can be assembled up to 24 hours ahead and refrigerated; add about 10 minutes to the covered baking time. For best results, grate your own cheese.
