This easy banana zucchini bread is topped with a crunchy cinnamon streusel, making it incredibly moist and flavorful. It’s the perfect way to use up ripe bananas and zucchini for a crowd-pleasing treat.

  • 1 ½ cups (180g) all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 medium ripe bananas, mashed (about 1 cup or 240g)
  • 1 medium zucchini, grated (about 1 cup or 200g), squeezed dry
  • ⅔ cup (130g) granulated sugar
  • ¼ cup (50g) packed brown sugar
  • 2 large eggs, room temperature
  • ⅓ cup (80ml) vegetable oil
  • 1 teaspoon vanilla extract
  • For the streusel:
  • ½ cup (60g) all-purpose flour
  • ⅓ cup (65g) packed brown sugar
  • 1 teaspoon ground cinnamon
  • Pinch of salt
  • 3 tablespoons (42g) unsalted butter, melted
  • ¼ cup (30g) chopped pecans or walnuts (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line with parchment paper.
  2. Grate the zucchini and squeeze out excess moisture using a clean kitchen towel or paper towels.
  3. Make the streusel: In a small bowl, combine flour, brown sugar, cinnamon, and salt. Add melted butter and stir with a fork until crumbly. Stir in nuts if using. Set aside.
  4. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon.
  5. In a separate bowl, mash the bananas. Add granulated sugar, brown sugar, eggs, oil, and vanilla. Whisk until smooth.
  6. Stir the squeezed zucchini into the wet mixture.
  7. Pour the wet ingredients into the dry ingredients and fold with a rubber spatula until just combined. Do not overmix.
  8. Pour batter into the prepared loaf pan and spread evenly.
  9. Sprinkle streusel evenly over the batter, pressing down gently.
  10. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean. If streusel browns too quickly, tent with foil after 40 minutes.
  11. Cool in the pan on a wire rack for 15 minutes, then lift out and cool completely before slicing.

Notes

Squeeze zucchini well to avoid soggy bread. Use spotty bananas for best sweetness. Cool completely before slicing to prevent crumbling. Store at room temperature for up to 3 days or freeze for up to 3 months.
