  • 68 medium fresh figs, sliced thinly
  • 4 ounces (115g) goat cheese, softened
  • 2 tablespoons heavy cream
  • 4 ounces (115g) prosciutto, thinly sliced
  • 1 teaspoon fresh thyme leaves (optional)
  • Freshly cracked black pepper, to taste
  • 1/2 cup (120ml) good quality balsamic vinegar
  • 1 tablespoon honey

Instructions

  1. Activate the yeast: In a mixing bowl, combine 3/4 cup warm water with 1 teaspoon sugar and 1 teaspoon active dry yeast. Stir gently and let sit for 5-10 minutes until foamy.
  2. Make the dough: Add 2 cups all-purpose flour, 2 tablespoons olive oil, and 1/2 teaspoon salt to the yeast mixture. Stir until a shaggy dough forms, then knead on a floured surface for 8-10 minutes until smooth and elastic. Add flour 1 tablespoon at a time if too sticky.
  3. Let dough rise: Place dough in a lightly oiled bowl, cover, and let rise in a warm spot for about 1 hour or until doubled in size.
  4. Prepare balsamic reduction: In a small saucepan, combine 1/2 cup balsamic vinegar and 1 tablespoon honey. Simmer over medium-low heat, stirring occasionally, until syrupy and coats the back of a spoon (10-15 minutes). Set aside to cool.
  5. Shape the dough: Preheat oven to 475°F (245°C). Roll out dough on a floured surface into a 12×8 inch rectangle. Transfer to a parchment-lined baking sheet or preheated pizza stone.
  6. Mix goat cheese topping: Combine softened goat cheese with heavy cream until creamy and spreadable.
  7. Assemble flatbread: Spread goat cheese mixture evenly over dough, leaving a 1/2-inch border. Arrange sliced figs on top, then lay prosciutto strips. Sprinkle thyme leaves and cracked black pepper.
  8. Bake: Bake flatbread for 12-15 minutes until crust is golden and crisp and goat cheese is bubbly. Watch carefully to avoid burning.
  9. Finish and serve: Remove from oven and drizzle balsamic reduction over the top. Slice and serve immediately.

Use a pizza stone for a crispier crust or a rimmed baking sheet lined with parchment paper. Activate yeast properly to ensure dough rises. Brush dough edges with olive oil for extra crunch.
