  • 1/4 cup (60ml) whole milk
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 teaspoon black pepper, freshly ground
  • 1 clove garlic, peeled (optional)
  • 1 tablespoon sour cream or cream cheese (optional)
  • Fresh chives or parsley for garnish (optional)

Instructions

  1. Wash and scrub the potatoes. Cut into 1-inch chunks. Place in a medium saucepan.
  2. Cover potato chunks with cold water by about an inch. Add 1/2 teaspoon salt. If using garlic, add it now. Bring to a boil over high heat, then reduce to medium-high and simmer until fork-tender, about 7-8 minutes.
  3. Drain potatoes in a colander and let steam for 30 seconds.
  4. Return the empty pot to low heat. Add butter and milk. Stir until butter is melted and milk is warm. If using sour cream or cream cheese, add and stir until smooth.
  5. Return drained potatoes to the pot with the warm milk mixture. Remove from heat. Mash with a potato masher or fork until desired consistency (smooth with a few small lumps).
  6. Add black pepper and additional salt to taste. Stir gently. Serve immediately, garnished with chives or parsley if desired.

Notes

Don’t overcook the potatoes to avoid gluey texture. Warm the milk and butter before adding to potatoes. Salt the water generously for best flavor. Let potatoes steam after draining to remove excess moisture. For extra creaminess, add a tablespoon of sour cream or cream cheese. Avoid using a food processor or blender.
