  • ½ teaspoon smoked paprika

  • 2 lbs Yukon Gold potatoes, peeled and quartered

  • ½ cup heavy cream, warmed
  • ½ cup sour cream
  • 1 teaspoon salt
  • ¼ teaspoon white pepper
  • 2 cloves garlic, whole

Instructions

  1. Prep the potatoes: Peel and quarter Yukon Gold potatoes. Place in a large pot and cover with cold water by about an inch. Add a generous pinch of salt and two whole garlic cloves. Bring to a boil over high heat, then reduce to a simmer. Cook for 12-15 minutes, or until a fork slides through easily.
  2. Prep the steak: While potatoes boil, pat steak cubes dry with paper towels. Season generously with salt, pepper, and smoked paprika. Toss to coat evenly. Let sit at room temperature for about 10 minutes.
  3. Drain and mash: Once potatoes are tender, drain in a colander. Return to pot (off heat) and let steam dry for a minute. Add softened butter and mash until mostly smooth. Pour in warmed cream and sour cream, then mash again until creamy. Season with salt and white pepper. Cover and set aside.
  4. Sear the steak bites: Place cast iron skillet over high heat and add olive oil. Wait until oil shimmers—almost smoking. Carefully add steak bites in a single layer. Don’t crowd the pan; work in batches if needed. Let sear undisturbed for 2 minutes. Flip each piece and cook for another 1-2 minutes for medium-rare.
  5. Add the garlic butter: Reduce heat to medium-low. Add butter pieces and minced garlic to the pan. Toss steak bites to coat in garlic butter. Cook for about 30 seconds—just until garlic is fragrant. Don’t let garlic burn.
  6. Finish and serve: Sprinkle with red pepper flakes if using, and toss in fresh parsley. Give everything a final stir. Plate mashed potatoes, top with garlic butter steak bites, and drizzle any remaining pan sauce over the top. Serve immediately.

Notes

Get the pan screaming hot for the best sear. Don’t move the steak while searing—let it develop a crust. Work in batches if needed to avoid overcrowding. Warm the cream before adding to potatoes to prevent them from becoming gluey. Let steak bites rest for a minute before serving. Fresh garlic is non-negotiable for best flavor.
