  • 1 cup mini pretzel twists (broken into bite-sized pieces if large)
  • 1/2 cup salted peanuts (optional; use roasted almonds or cashews if preferred)
  • 1/2 cup candy corn (or candy pumpkins)
  • 12 ounces white chocolate chips or melting wafers (recommend Ghirardelli or Wilton)
  • 1 teaspoon coconut oil or vegetable shortening
  • 1 cup mini marshmallows (regular white, not fruity)
  • 1/4 cup white chocolate chips, melted (for attaching eyes—reserve from main batch)
  • Mini candy eyeballs (about 24-30, such as Wilton brand)

Instructions

  1. Pop the popcorn and prep your pan. Pop 8 cups of popcorn using your preferred method (air popper, stovetop, or microwave). Remove any unpopped kernels. Spread the popcorn on a large baking sheet lined with parchment paper. Pick out any half-popped or burnt pieces.
  2. Melt the white chocolate. Place 12 ounces of white chocolate chips and 1 teaspoon of coconut oil in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until smooth and fully melted (about 90 seconds total). If it looks thick, add another 1/2 teaspoon of coconut oil and stir.
  3. Pour and toss. Drizzle the melted white chocolate over the popcorn on the baking sheet. Use a spatula to gently toss and coat as much of the popcorn as possible. Don’t overmix or the popcorn will break. Aim for some clumps and some individual pieces.
  4. Add the mix-ins. While the chocolate is still wet, sprinkle the broken pretzels, peanuts (if using), and candy corn over the popcorn. Press them in gently so they stick. Work quickly as white chocolate sets fast.
  5. Make the ghosts. Take the mini marshmallows and dip the top of each one into the reserved melted white chocolate (or use a toothpick to dab a small dot). Press two mini candy eyeballs onto the chocolate. Place each ghost face-up on a small piece of parchment paper. Let them set for about 5 minutes until firm.
  6. Arrange the ghosts. Once the popcorn mix has set for about 10 minutes (the chocolate should be tacky but not wet), gently press the ghost marshmallows into the popcorn. Don’t bury them—let the little faces peek out. If the chocolate on the popcorn has fully set, drizzle a tiny bit of fresh melted chocolate on the back of each ghost to glue them in place.
  7. Let it set completely. Leave the whole thing at room temperature for about 20 minutes, or until the white chocolate is firm and the ghosts are secure. If in a hurry, pop the baking sheet in the fridge for 10 minutes—don’t leave it longer or the popcorn might get chewy.

Notes

Use room temperature popcorn to prevent white chocolate from seizing. Don’t skip the coconut oil—it helps the chocolate coat evenly and adds a nice shine. Work in batches if doubling the recipe. Let ghosts set for 5 minutes before placing them on the popcorn to avoid sticky marshmallows. Store in an airtight container at room temperature for up to 3 days; do not refrigerate. If chocolate looks dull after a day, reheat on a baking sheet at 250°F for 5 minutes and cool completely.
