These quick and easy cream cheese rolls sneak finely pureed spinach and carrots into a creamy filling, making a healthy and delicious lunch option that kids love.

  • 8 oz cream cheese, softened
  • 1/2 cup finely shredded carrots
  • 1/2 cup fresh baby spinach leaves, finely chopped or pureed
  • 1 tablespoon honey or maple syrup (optional)
  • 1/2 teaspoon garlic powder (optional)
  • Salt and pepper to taste
  • 4 large flour tortillas or flatbreads (whole wheat preferred)
  • Optional: fresh herbs like chives or parsley, finely chopped

Instructions

  1. Rinse the spinach leaves and carrots thoroughly. Puree the spinach and carrots in a food processor until smooth, or finely chop and grate by hand.
  2. In a medium bowl, combine the softened cream cheese with the pureed vegetables. Add honey or maple syrup, garlic powder, salt, and pepper. Stir well until evenly mixed.
  3. Lay the tortillas flat on a clean surface. Optionally sprinkle chopped fresh herbs evenly over the surface.
  4. Spread a generous, even layer of the cream cheese veggie mixture onto each tortilla, leaving about a half-inch border around the edges.
  5. Roll the tortilla tightly but gently to avoid cracking. Use a sharp knife to cut each roll into 1 to 1.5-inch bite-sized pinwheels.
  6. Serve immediately or wrap tightly and refrigerate until lunch.

Notes

Use fresh spinach for best results; if using frozen, thaw and squeeze out excess water. Warm tortillas slightly if stiff to prevent cracking. Wrap rolls tightly in plastic wrap to keep fresh and slice just before packing. Rolls keep fresh up to 2 days refrigerated and freeze well when wrapped individually.
