  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced

  • 2 cans (15 ounces each) cannellini beans, drained and rinsed
  • 4 cups low-sodium vegetable broth
  • 1 large bunch kale, stems removed and leaves chopped (about 45 cups packed)
  • 2 tablespoons fresh lemon juice
  • ¼ cup grated Parmesan cheese (optional, plus more for serving)
  • Salt and black pepper to taste

Instructions

  1. Prep your ingredients first: dice the onion, mince the garlic, strip the kale leaves from the tough stems and chop into bite-sized pieces, and drain and rinse the beans.
  2. Place a large Dutch oven or heavy-bottomed pot over medium heat and add the olive oil. Let it warm for about 30 seconds until shimmering but not smoking.
  3. Add the diced onion and a pinch of salt. Cook for 4-5 minutes, stirring occasionally, until the onion is translucent and just starting to brown at the edges.
  4. Stir in the minced garlic, dried thyme, and red pepper flakes. Cook for exactly 30 seconds, stirring constantly, until fragrant.
  5. Pour in the drained beans and vegetable broth. Use a wooden spoon to scrape up any browned bits from the bottom of the pot. Increase the heat to high and bring to a boil (about 2-3 minutes).
  6. Once boiling, reduce the heat to medium-low and let it simmer for 3 minutes. Using a potato masher or the back of a wooden spoon, gently mash about a quarter of the beans right in the pot to thicken the broth.
  7. Stir in the chopped kale. Cook for 2-3 minutes, stirring occasionally, until the kale is bright green and tender.
  8. Remove the pot from the heat. Stir in the fresh lemon juice and grated Parmesan cheese. Taste and adjust salt and pepper as needed.
  9. Let the soup rest for 1-2 minutes before serving. Ladle into bowls and top with extra Parmesan and a drizzle of olive oil if desired.

Notes

Don’t overcook the kale—add it at the very end and cook just until bright green. The bean mashing trick is essential for a creamy broth. Use low-sodium broth to control salt. Toasting the spices in the hot oil releases their essential oils. The lemon juice is non-negotiable—it brightens the flavors. For meal prep, undercook the kale slightly as it will continue cooking when reheated. Rinse the pot with hot water immediately after serving to prevent bean residue from sticking.
