  • 2 cans (15 oz each) pinto beans, drained and rinsed
  • 8 oz cream cheese, softened to room temperature
  • 1 cup barbecue sauce
  • 1 cup shredded sharp cheddar cheese
  • 6 strips thick-cut bacon, cooked and crumbled
  • 1/2 cup diced red onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional)
  • 2 green onions, sliced thin
  • Fresh cilantro (optional)
  • Tortilla chips, Fritos scoops, or sliced bell peppers for serving

Instructions

  1. Cook the bacon: Place bacon strips in a cold skillet, then heat to medium. Cook until crispy, about 6-8 minutes, flipping once. Transfer to a paper towel-lined plate. Once cool, crumble into small pieces. Reserve 2 tablespoons of the bacon drippings.
  2. Prep your beans: Drain and rinse both cans of pinto beans. Place half the beans (about 1 1/2 cups) into a food processor or blender. Add 2 tablespoons of water and blend until completely smooth, about 30-45 seconds. Scrape down the sides once.
  3. Soften the cream cheese: Ensure cream cheese is at room temperature. If needed, cut into cubes and microwave for 15-20 seconds until soft but not melted.
  4. Sauté the aromatics: In the same skillet used for bacon (with 1 tablespoon of reserved drippings), cook the diced red onion over medium heat for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds more until fragrant.
  5. Mix the base: In a medium bowl, combine softened cream cheese, blended beans, remaining whole beans, barbecue sauce, Worcestershire sauce, smoked paprika, black pepper, and cayenne (if using). Mix until well combined. Add cooked onion and garlic, stir again.
  6. Fold in the good stuff: Gently fold in 3/4 cup of shredded cheddar cheese and half the crumbled bacon. Reserve the rest for topping.
  7. Transfer to cooking vessel: If using a slow cooker, spray insert with non-stick spray and transfer dip mixture. Cook on low for 2 hours or on high for 1 hour, stirring once halfway. If using oven, transfer to a greased 9-inch baking dish and bake at 350°F for 20-25 minutes until hot and bubbly.
  8. Add toppings: During the last 10 minutes of cooking, sprinkle remaining cheddar cheese and crumbled bacon on top. Cover and let cheese melt completely.
  9. Garnish and serve: Sprinkle with sliced green onions and fresh cilantro if using. Serve hot with tortilla chips or Fritos scoops.

Notes

For a vegetarian version, skip the bacon and add 1/2 teaspoon liquid smoke with the smoked paprika. Use plant-based cream cheese and vegan cheddar. For a spicier version, add diced green chiles and use pepper jack cheese. The dip can be made a day ahead and reheated. Leftovers keep in the refrigerator for up to 4 days or can be frozen for up to 3 months.
